eBike technology explained

Hey everyone!

Just got back from an awesome 20-mile ride on my fat tire eBike, tackling some really loose gravel and a few muddy patches – it handled like a champ! It got me thinking about all the tech packed into these things, especially with the extra demands of fat tires and off-road riding. I'm curious, what's one piece of eBike technology, specifically for fat tire bikes, that you find most fascinating or that you think makes the biggest difference in your riding experience? Is it the motor type, battery chemistry, or maybe something else entirely?
