eBike technology explained

Been lurking for a bit and finally decided to jump in. I'm building out a custom hardtail eMTB for some serious trail riding – think steep climbs and rocky descents – and I'm really diving deep into understanding all the different eBike tech options. Specifically, when it comes to motors for custom builds, how do you guys weigh the pros and cons of hub vs. mid-drive, especially considering factors like torque sensing vs. cadence sensing? I'm trying to figure out which setup will give me the most natural feel and best power delivery for those technical climbs without feeling like a moped. Any insights or personal experiences with custom motor choices would be awesome!
