eBike technology explained

Been thinking a lot about cargo eBikes lately, especially since I'm eyeing one for grocery runs and school drop-offs – maybe a RadWagon or a Tern GSD. I'm curious about the tech behind them, particularly how the motor and battery systems are optimized for carrying heavy loads. What's the real difference in motor torque or battery capacity needed for, say, hauling 100+ lbs up a decent hill compared to a regular commuter eBike? Any insights on mid-drive vs. hub motors for cargo specifically?
