eBike technology explained

I was just reading an article in an eBike news roundup about the latest advancements in motor and battery tech, and it got me thinking. It feels like every month there's a new innovation, whether it's more efficient mid-drives or longer-lasting batteries. What's one piece of eBike technology you're most curious about, or something you wish was explained better? I'm personally still trying to wrap my head around torque sensors versus cadence sensors and how much difference it really makes on a hilly commute.
