Legal regulations for eBikes

I've been loving my new Class 2 eMTB for trail riding lately, but it got me thinking about all the different rules out there. It seems like every state, and sometimes even different cities, have their own take on eBike classifications and where we can actually ride. What's been your experience navigating the legal landscape for eBikes, especially when traveling or trying out new trails? Are there any particularly confusing or surprisingly strict regulations you've come across?
