Legal regulations for eBikes

I've been loving my new Class 3 eMTB on the local trails and bike paths, but I'm getting a bit confused about the legal landscape for eBikes. It seems like every state and even some cities have different rules regarding motor wattage, top speed, and where you can actually ride.

For example, I've heard Class 3s are sometimes restricted on multi-use paths, even if they're pedal-assist only. What's been your experience navigating these regulations, especially if you travel with your eBike? Any tips for finding clear info for different regions?
