eBike technology explained

I'm diving deep into planning my next custom eBike build – thinking of converting my old hardtail mountain bike into a commuter/light trail explorer. This got me wondering about all the different motor technologies out there. For those of you who've built your own, what's your take on the pros and cons of hub motors vs. mid-drives, especially when considering things like torque sensing vs. cadence sensing for a more natural feel? I'm trying to wrap my head around the real-world differences beyond the spec sheets.
