New to eBikes - where to start?

Hey everyone! I'm totally new to the eBike world and super excited to dive in, but honestly, I'm feeling a bit overwhelmed with all the options. I'm really drawn to the fat tire eBikes because I live near some sandy trails and love the idea of year-round riding, even in light snow. For those of you who started with a fat tire eBike, what was the absolute first thing you looked for or wished you knew before buying? I'm thinking about rides around 10-15 miles on mixed terrain.
