Weather-resistant gear for commuters

Hey everyone!

Just wanted to start a discussion about weather-resistant gear, especially for us eBike commuters. My daily ride is about 8 miles each way on my hybrid eBike, mostly paved roads but sometimes I hit a gravel path, and the weather here in the PNW can be... unpredictable, to say the least!

I'm constantly battling sudden downpours and chilly winds, and my current "water-resistant" jacket isn't cutting it anymore. What are your go-to recommendations for truly waterproof (or at least highly water-resistant) jackets, pants, or even shoe covers that don't make you feel like you're riding in a sauna? Any specific brands or features you swear by for staying dry and comfortable on your commute?
